Merry & Bright – & Hungry too


Christmas Day should be spent getting up ridiculously early to open presents, lounging around in your pj’s until noon and eventually making a delicious lunch.

Wait, who is going to lunch?! I’ve been busy opening presents & I think I need a nap now…(This is exactly what I used to think to myself on Christmas Day).

Adopt my Christmas tradition of make a big pot of soup on Christmas Eve & you’ll never get stuck making two big meals on Christmas Day again!

Last year I did seafood bisque on Christmas Eve so this year I went with Chili. It is so easy to make & you can easily try new flavors and concoctions without ruining the pot (just add more tomatoes whenever things don’t taste right).

What you’ll need;
2 pounds ground beef
2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon cayenne pepper
1, 15-ounce can kidney beans, drained and rinsed
1, 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar for serving

Start by browning your ground beef with your garlic. Once you’ve finished, drain the excess fat. Now you’re ready to add the rest of your ingredients and allow it to simmer for an hour or so. Then serve!


I like to cook my soup up for Christmas Eve dinner and it makes for the perfect lunch on Christmas Day when you’ve usually skipped breakfast and are looking forward to preparing a big dinner. Enjoy!
